Ingredients for Fritters:
2 lbs. Zucchini (about 5 medium sized zucchinis)
1 teaspoon sea salt
2 eggs, slightly beaten
½ cup chopped green onions
¾ cup all-purpose flour
1 teaspoon baking powder
1 teaspoon garlic powder
½ teaspoon Oklahoma Pepper
½ teaspoon Smoked Paprika
Olive Oil for frying fritters
Ingredients for Sour Cream Sauce:
½ cup sour cream
2 teaspoons lemon juice
1 teaspoon finely chopped green onions
½ teaspoon black pepper
Directions:
1. Grate washed zucchini and place in a mixing bowl. Stir in 1 teaspoon salt and set aside for at least 10 minutes. After 10 minutes drain liquid from the zucchini and squeeze out as much liquid as you can with your hands.
2. Stir in the flour, eggs, green onions, baking powder, garlic powder, Oklahoma Pepper, and smoked paprika.
3. Add 3 tablespoons of olive oil to a heavy bottom skillet over medium heat. Place heaping tablespoons of zucchini mixture in skillet and flatten tops to form a pancake shape. Fry 3 to 4 minutes on each side until golden brown. Place cooked fritters on a paper towel lined plate to absorb some of the oil.
4. Serve with sour cream sauce.
Sour Cream Sauce:
Mix all ingredients together and serve with zucchini fritters.
