Southern Peach Cobbler

Ingredients:

For the Filling:

5 cups peeled peaches or (2 large cans, drained well)

¼ cup white sugar

¼ cup brown sugar

¼ teaspoon Saigon Cinnamon

1 teaspoon lemon juice

2 teaspoon cornstarch


For the Crust:

1 cup all-purpose flour

¼ cup white sugar

¼ cup brown sugar

1 teaspoon baking powder

½ teaspoon salt

6 tablespoons butter, cold and cut into pieces

¼ cup hot water


Directions:

1. Preheat oven to 425 degrees

2. In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, lemon juice, and cornstarch. Toss to coat. Pour into a 2 quart baking dish. Bake in oven for 10 minutes.

3. While the peaches are in the oven, in a large bowl combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Cut in butter with a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.

4. Remove peaches from the oven and drop spoonful of mixture over the top. Sprinkle with 2 Tablespoons of Sunshine Baking Spice.

5. Bake until top is golden, about 30 minutes.
