This is a perfect comfort food dish. This dish is great as a meal with a side salad or as a holiday side dish.
Ingredients:
3 large potatoes
½ cup cubed smoked ham or 4 slices bacon, chopped
1large yellow onion, diced
1 Tablespoon butter
For the Sauce:
2 Tablespoons butter
2 Tablespoons flour
1 ½ cups milk
¼ cup heavy cream
3 ounces cream cheese or sour cream
Oklahoma Pepper to taste
1 teaspoon Herb and Garlic Salt
1 teaspoon dill
½ teaspoon Nutmeg
1 Cup white cheddar, shredded
Directions:
1. Place the diced potato into a small pot. Pour in enough cold water to cover potatoes and bring to boil. Reduce to simmer for 5 minutes or until they are barely tender. Drain and set aside.
2. Sauté ham or bacon in a skillet until browned. Drain and set aside. In the same skillet melt 1 Tablespoon butter and sauté onions until brown and caramelized, about 7 minutes.
3. Sprinkle in flour and whisk to create a paste. Cook for 1 minute. Whisk in milk. Increase heat to medium high and continue whisking until sauce thickens. Reduce heat and stir in cream, cream cheese, salt, pepper, dill, nutmeg, and 1/2 cup grated cheese. Stir until cheeses melt. Add in the ham or bacon.
4. Pour sauce over potatoes and transfer to a baking dish. Top with remaining cheese. Bake at 375 degrees for 25 to 30 minutes. Place under broiler for a few minutes to brown the top.
